The biscuit of Brits.

Hobnobs are great, especially good for dunking in tea but they contain wheat flour which is difficult for FODMAPs and of course a gluten free diet. Gluten free hobnobs are available and are fantastic but cost a fair amount and you can't always find them.

Ingredients

150 g sugar (caster sugar)
130 g butter (unsalted) - I am using a dairy free baking margarine
1 tablespoon milk - I am using almond milk
2 tablespoon Golden Syrup
1/2 teaspoon baking soda - this is for browning, not rising
150 g plain flour - I am using free from blend
150 g oats


Method

Beat together the butter and sugar, you're just looking to incorporate them so they don't need to be creamed.

Warm up your Golden syrup, milk and vanilla in the microwave for 30 seconds, this will make it easier to pour in to the mix evenly.

Add in your dry ingredients and mix well to avoid any lumps of flour.

Chill for 20 minutes.

Preheat your oven to 170 Β° c

Measure out your biscuits, I like to use a small ice cream scoop to try and keep them even so they all finish baking at the same time.

Bake for approximately 18 minutes, keep a close eye on them as they can go from gorgeous caramel to burnt quite quickly.

Look for nice golden edges

FODMAPs

Oats are low in FODMAPs to 60g so as long as your don't eat all of the biscuits in one sitting you should be fine!

Golden syrup is low to 7g (about a teaspoon) so again, enjoy in moderation.

Butter does not contain any FODMAPs but it is high in fat which many people find aggravates their IBS.

Alterations

I have used a Free From blended flour for this recipe but wheat flour or wholemeal flour would both work very well. I have also used a dairy free baking margarine, butter would work absolutely fine as well.

If baking for Coeliac or gluten free, please ensure gluten free oats are used, oats are naturally gluten free but can become contaminated during their processing.

Hobnobs and chocolate are always a winning combination, once cooled you can dunk these biscuits in to some melted chocolate and allow it to set. Because you're making your own you can choose whichever chocolate you like.
