🧁 Carrot cake muffins 🧁

I like my carrot cake quite carroty and with a good level of spice. You can use whichever warm spices you prefer, I like to use a variety as I think each one adds something but if you only have cinnamon or ginger you'll still have a tasty cake.

I like to add a bit of some soft, sweet or neutral tasting fruit or vegetable to keep the cake soft and moist. I've had great success with sweet potato, pumpkin, squash and marrow but if you have leftovers of something that need using then consider their suitability. Fruits such as apple, banana or even pears would work well.

Ingredients

Flour 200g *I used Doves Farm gluten free

Eggs 4

Nuts 100g

Sugar 240g

Oil 250ml

Carrot 400g

Fruit/Veg 75g

Baking Powder 1 tsp

Bicarb soda 1/2 tsp

Cinnamon 1 tsp

Ginger 1 tsp

Cardamom 1/2 tsp

All spice 1/2 tsp

Makes 10-12 muffins

Method

Preheat oven to 180Β°C

Peel carrots and if you are using an all singing and dancing food processor to grate then set aside for a minute, otherwise you can grate your carrots and set them aside for later.

Measure out all of your dry ingredients, add all except the nuts to a bowl and mix together

Add your nuts to a food processor, chopping device or chop them by hand. I like mine quite fine with a few chunkier bits here and there.

You can now use the food processor to grate the carrot and any fruit or vegetables that you might be adding, if you had done it earlier the nuts would get wet and stuck to the inside of the chopper.

Whisk egg until pale, slowly add in sugar and whisk until doubled in volume. Slowly beat in drizzled oil (then change from whisk to paddle attachment) followed by the dry ingredients then the vegetables.

Mix until combined then add to prepared muffin cases or cake tins. Bake for 15-25 minutes for muffins 30-40 minutes for cakes. Stab with a stabby thing to see if they are done

Crumble topping

For the muffins I didn’t want to add icing, I think this is a nice way to top them. You get sweetness, texture and the oats add some flavour.

Add before baking, crumble over the top of the muffins immediately before baking. Mix together the following:

Brown sugar 100g

Softened butter 100g

Nuts 50g

Oats 100g
